FOOD AND DRINKS



Slovenian food is a mixture of various types of food. There is very little original Slovenian food, however, we are famous for a nut roll called ‘potica’, a dish called ‘žganci’ and some other food. The usual Slovenian Sunday lunch is beef soup, sautéed potatoes and roasted pork.

Traditional dishes and desserts in Slovenian regions:


1. THE ALPINE REGION

ŽLIKROFI (STUFFED DUMPLINGS)

Traditionally the best stuffed dumplings are those from Idrija. They are stuffed with potato, cracklings, breadcrumbs and chives.

* Dough ingredients: flour, egg, oil, water or milk. Stuffing ingredients: potatoes, smoked bacon or minced lard or cracklings, onion, chives, marjoram, salt and pepper.

POTICA (NUT ROLL)

Potica is an original Slovenian dessert. It is made of leavened bread and filling, usually walnut.

* Dough ingredients: milk, yeast, sugar, flour, butter, yolk, lemon peel, salt. Stuffing ingredients: butter, eggs, sugar, cinnamon, lemon peel, cream, walnuts and sugar.


2. THE PANNONIAN REGION

BUJTA (TURNIP STEW)

* Ingredients: turnip, yeast, pork bones, millet. Spices: salt, pepper, green pepper, tomatoes, laurel, pepper, oil, flour, onion, water, clove.

GIBANICA (LAYER CAKE)

The original 'gibanica' is covered with four kinds of filling (poppy seeds, cottage cheese, walnuts and apples) in a strict order.

* Dough ingredients: flour, egg, salt, vinegar, oil, water. Stuffing ingredients: cottage cheese, cream, raisins, eggs, sugar, vanilla sugar, cinnamon and sugar.


3. THE DINARIC REGION

ŽGANCI (CABBAGE AND BUCKWHEAT ŽGANCI WITH CRACKLINGS)

* Ingredients for cabbage: cabbage, onion, grease, salt and pepper. Ingredients for buckwheat žganci: buckwheat flour, salt, oil, cracklings and sour cream.

TARRAGON POTICA (TARRAGON ROLL)

* Dough ingredients: flour, yeast, yolk, eggs, milk, butter, salt, sugar, lemon peel, rum, sugar. Stuffing ingredients: butter, yolk, eggs, sugar, vanilla sugar, lemon peel, tarragon and fruit juice.


4. THE KARST REGION

POLENTA (MAIZE PORRIDGE)

Polenta is an ancient food, cooked only in the Karst region. Apart from maize polenta, buckwheat and white polenta are also found in Slovenia.

* Ingredients for maize porridge: potatoes, corn meal, salt, butter. Ingredients for frika: minced lard and sheep cheese.

ŠTRUKLJI (COTTAGE CHEESE PIE)

Štruklji is a dish made of rolled dough with stuffing. Common stuffing are nuts, potatoes, tarragon and cottage cheese. There are more than 100 different ways of 'štruklji' them all over Slovenia.

* Basic ingredients: cottage cheese, eggs, flour and salt.
